Onion Pakoda/Pakora

Warm crispy onion fritters - a snack that no one can refuse, made with ingredients we always have in our pantry.Pakodas are easy to prepare for small gatherings and large and are the perfect snack to munch on when we have sooo much to talk and catch up!

Ingredients:

 

1 1/4 cup besan (bengal gram, chickpea flour)
1/2 cup rice flour
2 tablespoon ghee melted
1 pinch baking soda
3 onions finely sliced
1/4 tsp chili powder
6 curry leaves
salt to taste
water as needed
oil for deep frying


Preparation:

  • Combine all the dry ingredients together.Mix well.
  • Add the melted ghee and just enough water and mix with fingers making sure the batter is pretty thick.DO NOT ADD TOO MUCH WATER.
  • Check seasoning.
  • Heat oil.Drop small lumps of batter (use hands or a small spoon,I personally like to use fingers,they work much better) into the oil and deep fry them turning the pakodas, so they are well cooked.The oil should be really hot so the pakodas bounce back to the surface when you drop in the batter. You can reduce the heat a bit when they are cooking.
  • Remove pakodas when golden brown and transfer them to a plate lined with paper towels.
  • Serve hot with a nice chutney or as it is.


Tips:

Add minced ginger,green chilies or chopped coriander leaves to the batter if desired.
