A popular South Indian snack that is a part of most festive meals. Goes well with coffee or tea or can be served as an appetizer.

Ingredients
1 Cup Channa dhal/Kadalai paruppu (yellow split)
1-2 Red chillies
1/2 Red onion
1/4 Tsp Sombu
1 sprig Curry leaves (chopped)
Few Coriander leaves (chopped)
Salt according to your taste
Oil – for deep-frying
Preparation:
- Soak channa dhal for about 4 hours.
- Drain the water completely & grind coarsely with red chillies and sombu.
- Transfer this into a bowl.
- To this add chopped onion, chopped curry leaves, chopped coriander leaves and salt and mix well.
- Heat oil in a wok.
- Take small lemon sized vadai mix, put it your (wet) palm, press gently and flatten it into vadai shape.
- Gently put in the hot oil and deep fry; turn over the vadai andcook till it is fried evenly.
