A classic "street-food" originated from the north, but now enjoyed all over India. The bhaji, filled with vegetables is very healthy to the kids.

Ingredients:


1 big or 2 medium potatoes cut into cubes
1 carrot chopped
10-15 green beans chopped
1/4 cup frozen green peas
1 big onion chopped
1 big tomato chopped
1/2 capsicum chopped
1 1/2 tsp ginger-garlic paste
1 tsp jeera powder
1 tsp coriander powder
1/4 tsp turmeric powder
1 tbsp pav bhaji masala
1/2 stick butter

Preparation:

 

  • Pressure cook potatoes, carrot, beans, peas & salt. Mash them and keep aside.
  • Heat butter in a pan and add chopped onion along with ginger-garlic paste & little salt.
  • Fry till golden.
  • Add tomatoes & little salt. Cover and cook till tomatoes are soft. Mash well.
  • To this add chopped capsicum, Pav bhaji masala, turmeric powder, coriander powder & jeera powder.
  • Cook till ghee floats on top.
  • Now add mashed vegetables along with water and cook for about 20 minutes.
  • Finally add chopped coriander leaves.
  • Serve with chopped onion, lemon juice & pav (Slice the Pav, spread some butter & roast both sides).



Tips:

Half should be potatoes and rest of the half should be mix of other vegetables.

best pav bhaji I've ever made
loved the recipe. was a great hit with my kids. i added some chilli powder cos my p.b. masala is not very spicy. prep time is quite short. makes a great 30 min meal! thanks!
