Shami Kabab

These are really worth the bit of extra effort that it takes to make.


Ingredients:

1 kilo (2 lbs.) lean beef stew meat
1 onion, chopped
2 tablespoons oil
1 tablespoon grated, fresh ginger
4 large cloves garlic, chopped
1/2 teaspoon black pepper
1/4 teaspoon ground cinnamon
1/4 tsp. ground cloves
1/2 teaspoon whole cumin seeds
1/2 to 1 tsp. (depends how hot you like it) red cayenne pepper
1 1/2 teaspoon salt
3 /4 cup split yellow peas



Preparation:


  • Heat oil and fry onion until browned then add the meat and spices along with 1 cup of water. Pressure cook for 25 minutes or cook over low heat for 3 hours until very tender (adding more water if necessary).
  • Now add 3/4 cup split yellow peas-that were presoaked in water for 2 hours and then drained-into the pot and cook over medium heat (no pressure cooking)for 20 minutes or until beans are soft and the mixture is dry. Cool the mixture slightly, divide it in half and grind each batch in the food processor for about 30 seconds or until well ground and beans are well mixed within the meat.
  • Put in a large bowl and add:
  • 1/2 onion, finely chopped
  • 1/2 bunch (or about 3/4 cup) chopped, fresh cilantro
  • 1 teaspoon whole cumin seeds
  • 1 teaspoon dry, ground corriander
  • 2-3 finely chopped chilli peppers, again depending on your taste
  • 1 teaspoon fresh, grated ginger
  • 2 eggs
  • Mix this into the beef mixture with your hands, adjust the salt and form the round patties about 2 inches wide and 1/2 inch thick, squeezing the kabab tightly to keep it together well. Add a tablespoon of oil to a pan over medium heat and fry in small batches until brown and crispy on both sides, adding additional oil for the remaining batches.


Tips:

These freeze wonderfully. After forming patties, lay in a single layer and freeze. Once frozen, put them in a ziplock bag and bring them to room temp. before frying them. This way, you can even double the recipe, do all the work at once and have kebab to enjoy as a tasty addition to your other meals.
You can use whole spices instead of ground if you prefer, be sure to remove them before adding the beans.

Thanks for the kabab recipe !! When I was reading your recipe, I remembered the "Kari vadai / Kheema vadai" recipe in this site...both these recipes share the same main ingredients - meat & yellow split peas!!I'll def. be trying Shami kababs soon...and love the convenience of freezing them.Great idea-THANK U!
