Crepes made with a batter of rice and split urad dal. Dosas are extremely easy to make and versatile.Prepare plain dosa, masala dosa, egg dosa, ghee roast etc etc. with this simple batter - the possibilities are endless .

Ingredients:
1 cup raw rice
1 / 2 cup split urad dal (no skin)
1 /2 cup rice flour
2 tsps methi seeds
2 tbsps besan powder
water
salt
ghee or oil.
Preparation:
- Wash and soak the rice and urad dal for a couple of hrs.
- Grind them in a grinder / blender along with the rice flour, and besan adding sufficient water to make a smooth batter.
- Leave it in a warm place to ferment overnight.
- The batter should have fermented and increased in volume the next morning.
- Add sufficient salt and mix well.
- Heat a tawa or non stick pan.
- Pour a spoonful of batter in the center and spread out into a thin circle.
- Top with a few drops of ghee or oil and cook till golden brown.
- Flip to cook on the other side. Fold in half and serve with chutney and sambar.
Tips:
1. To season the dosa tawa and to prevent the dosa from sticking to it - Pour a tsp of oil in the dosa tawa and rub it with a piece of onion .
2. Keep dosa batter in a warm oven to help it ferment faster - especially in winter.
