Crepes made with a batter of rice and split urad dal. Dosas are extremely easy to make and versatile.Prepare plain dosa, masala dosa, egg dosa, ghee roast etc etc. with this simple batter - the possibilities are endless .

Ingredients:


1 cup raw rice

1 / 2 cup split urad dal (no skin)

1 /2 cup rice flour

2 tsps methi seeds

2 tbsps besan powder

water

salt

ghee or oil.


Preparation:

  • Wash and soak the rice and urad dal for a couple of hrs.
  • Grind them in a grinder / blender along with the rice flour, and besan  adding sufficient water to make a smooth batter.
  • Leave it in a warm place to ferment overnight.
  • The batter should have fermented and increased in volume the next morning.
  • Add sufficient salt and mix well.
  • Heat a tawa or non stick pan.
  • Pour a spoonful of batter in the center and spread out into a thin circle.
  • Top with a few drops of ghee or oil and cook till golden brown.
  • Flip to cook on the other side. Fold in half and serve with chutney and sambar.


Tips:

1. To season the dosa tawa and to prevent the dosa from sticking to it - Pour a tsp of oil in the dosa tawa and rub it with a piece of onion .

2. Keep dosa batter in a warm oven to help it ferment faster - especially in winter.

I tried dosa but they were not so soft....and as I wanted the brown colour I left it for a few sec on the pan...this resulted in being a bit moistureless and hard.Please suggest by mail what i need to do....otherwise the dosa tasted good.

Crisp & Brown
Arpita, thank u for ur feedback!Its taken me a few days to get back to u coz I was experimenting with measurements to get crisp,brown yet moist dosas.I can totally undersatnd how the dosa must have turned out - when I make dosas with this batter it comes out fine and when my hubby makes the dosas with the same batter its hard & dry sometimes;-).I guess the pan temperature,how u spread the batter, oil etc. matter too.Try the foll. dosa batter measurements - the taste & look of the dosas r just like the crisp, yummy ones u get at restaurants. Its error proof!The addition of "RICE FLOUR" & "BESAN" make them CRISP & BROWN. I will be updating the measurements soon. 1 cup rice,1/2 cup urad dal,1/2 cup rice powder,2 tsps methi seeds,2 tbsps besan powder, water, salt.Soak & grind the above & let it ferment overnight. These dosas r really good though it has a bit more ingredients.Try it & let me know how it turns out for u. Happy cooking!
