Eggs on a dosa – a very tasty combination. Flip dosas and fully cook the eggs or just cover and simmer till the eggs are half cooked – Any way you like it!

Ingredients:
2 cups raw rice
1 / 2 cup split urad dal (no skin)
water
salt
ghee or oil
1 egg.
Freshly ground black pepper
Preparation:
- Wash and soak the rice and urad dal for a couple of hrs.
- Grind them in a grinder / blender adding sufficient water to make a smooth batter.
- Leave it in a warm place to ferment overnight.
- The batter should have fermented and increased in volume the next morning.
- Add sufficient salt and mix well.
- Heat a tawa or non stick pan.
- Pour a spoonful of batter in the center and spread out into a THIN circle.
- Top with a few drops of ghee or oil.
- Break an egg over the spread batter and cover the pan with a lid/cookie sheet etc.
- Once the egg as cooked as desired and the edges of the dosa are crisp , sprinkle some salt and pepper.
- Transfer to a plate and serve with chutney and sambar.(Do not flip and cook the other side)
OR
- Break an egg over the batter and spread the egg around with a spoon. Flip the dosa and cook on the other side till the egg is well done.
- Sprinkle with salt and pepper.
- Transfer to a plate and serve with chutney and sambar.
Tips:
1. To season the dosa tawa and to prevent the dosa from sticking to it - Pour a tsp of oil in the dosa tawa and rub it with a piece of onion .
2. Keep dosa batter in a warm oven to help it ferment faster - especially in winter.
