Vegetable Upma

A tiffin that takes no time to prepare . Serve with chutney, sambar or just plain old sugar!

Ingredients:
 

2 cups - Roasted rava / sooji

4 cups water

1 tbsp oil / ghee

1 / 4 tsp mustard seeds

3 curry leaves

2 dried red chilies

1 small onion

1 1/2 cup grated carrot

1 thinly cut green beans

2 pinches turmeric powder

salt to taste

 
Preparation:
 
  • Heat oil or ghee.
  • Add the mustard seeds, curry leaves and dried chilies.
  • When it crackles , add the onions. Cook a few mins.
  • Add the carrots, green beans , turmeric and salt. Cover and cook till the vegetables are soft.
  • Pour in the water. Season with salt and bring the water to a boil.
  • Reduce heat and pour in the rava SLOWLY, stirring continuously with a whisk or spoon to avoid any lumps.
  • Simmer a few mins till rava is cooked.
  • Enjoy hot with chutney and sambar.
