Coconut Chutney with Mint Leaves

An interesting twist to the classic coconut chutney.the mint leaves gives a nice aroma to the chutney.

Ingredients:

1 Cup grated Coconut
1 Red Chilli
1/2 Cup Mint Leaves
2 cloves Garlic
3 Shallots diced
1 small Tomato chopped
Salt to taste
1 Tsp Oil

Seasoning:

1/4 Tsp Mustard Seeds
1 Tsp Urad Dhal
1 Red Chilli broken
Few Curry Leaves

Preparation:
  • Fry the above ingredients in a tsp of oil and grind to a paste with little water and salt.
  • Heat 1 tsp oil and add the seasoning.
  • Once mustard crackle,remove from heat and pour over chutney.

Tips:

Little tamarind can be added while grinding.
