The ubiquitous south indian dish that is made for lunch and as accompaniment for Idli, Dosa or Vada.
Sambar
Ingredients:


1 medium green pepper cut into big pieces
1 medium tomato chopped
1 small red onion diced
1 1/2 tsp sambar powder
1/4 tsp puli/tamarind paste
1/2 cup thuvar/toor dhal
1/4 tsp mustard
1 sprig curry leaves
1/4 cup chopped coriander leaves
ping of hing
1 tblsp oil


Preparation:

Pressure cook thuvar dhal with pinch of hing & few drops of oil.
Heat oil in a pan & add mustard.Once it crackles, add curry leaves & onion.
Fry till soft & add tomato & salt.Cook till mushy.
Add brinjal & fry for few minutes.
Add sambar powder, puli paste & 1 cup water.
Cook till oil floats on top.
Add thuvar dhal.Bring it to a boil & cook in low heat for 20-30 minutes.
Add chopped coriander leaves immediately taking it off the stove.


Tips:
For sambar, any vegetable (okra/brinjal/white pumpkin/drumsticks etc)
can be added.
Adding few drops of oil while cooking dhal will make it cook fast.

Very Tasty
We all have different versions of sambhar. I wanted to try this one and it was very tasty and did not take much time either. Thanks Hanee. Amazing site too!!!
