Rice Kheer

A popular dessert found in almost every Indian restaurant buffet. If you do not want to spend an hour cooking kheer............ stirring continuously, try this recipe-it can't get any easier.

Ingredients:


1/2 cup Basmati rice soaked in water
1/2 cup milk
1 can evaporated milk-12 oz
1/2 14oz can sweetened condensed milk
1 tsp cardamom powder
a few strands saffron
a handful of coarsely powdered pistachios



Preparation:

  • Cook rice with enough water in the microwave for about 7 - 10 mins or until well done.
  • Drain excess water and mash the rice a little.
  • In a non stick pan, heat milk and evaporated milk .
  • When it comes to a boil,add in the cooked rice,condensed milk ,cardamom powder & saffron.
  • Bring to a boil & then simmer.
  • Add more condensed milk if you like the kheer really sweet.
  • Stir, so it does not stick to the pan.
  • Transfer to a serving bowl.Garnish with powdered pistachios.



Tips:


If desired use raisins & slivered almonds to garnish.
