Sooji Halwa

Ingredients:

1/2 cup sooji/rava/cream of wheat
3/4 cup sugar
1 cup water
1/2 cup milk
1/4 cup ghee
few strands of saffron
1 pinch-cardamom powder
a handful of raisins
a handful of cashewnuts

Preparation:
  • Heat 1 tbsp ghee in a pan .
  • Fry the cashew nuts and raisins in ghee and set it aside.
  • Add the remaining ghee & roast the sooji for about 6 mins -till it turns golden brown....make sure it doesn't turn too dark.Set the sooji aside to cool.
  • Bring the milk & water to a boil.Add in the sugar,saffron & cardamom powder.Stir well.
  • To this syrup add the roasted sooji,raisins & cashew nuts slowly,STIRRING CONTINUOSLY to avoid any lumps.
  • Cook for about 4 mins.When done, transfer to a serving dish.
  • Remember, the halwa may look gooey when hot, but will be fine once it cools down.
  • Serve either hot or chilled.

Tips:
  1. Use a whisk to stir the sooji-works better than a spoon to eliminate lumps.
  2. Add a bit of orange food color or any other color of your choice if needed.
  3. You can use slivered almonds instead of the cashews.
