Ingredients:
1/2 cup sooji/rava/cream of wheat
3/4 cup sugar
1 cup water
1/2 cup milk
1/4 cup ghee
few strands of saffron
1 pinch-cardamom powder
a handful of raisins
a handful of cashewnuts
Preparation:
- Heat 1 tbsp ghee in a pan .
- Fry the cashew nuts and raisins in ghee and set it aside.
- Add the remaining ghee & roast the sooji for about 6 mins -till it turns golden brown....make sure it doesn't turn too dark.Set the sooji aside to cool.
- Bring the milk & water to a boil.Add in the sugar,saffron & cardamom powder.Stir well.
- To this syrup add the roasted sooji,raisins & cashew nuts slowly,STIRRING CONTINUOSLY to avoid any lumps.
- Cook for about 4 mins.When done, transfer to a serving dish.
- Remember, the halwa may look gooey when hot, but will be fine once it cools down.
- Serve either hot or chilled.
Tips:
- Use a whisk to stir the sooji-works better than a spoon to eliminate lumps.
- Add a bit of orange food color or any other color of your choice if needed.
- You can use slivered almonds instead of the cashews.
