Wholesome and tasty omelet with spinach, cheese and mushrooms.

Ingredients:
3 eggs
3 /4 cup each shredded cheddar and mozzarella cheese
1 / 2 cup frozen spinach
1 cup fresh mushrooms (thinly sliced)
2 tbsp. butter or olive oil
salt
freshly ground black pepper
Preparation:
- Beat eggs with sufficient salt and pepper.
- Thaw spinach in the microwave.
- Heat 1 tbsp butter/olive oil in a pan and saute the mushrooms and spinach. Remove and set aside.
- Add another tbsb butter / olive oil to the pan.
- Pour in 3 / 4 of the beaten eggs. Once the egg settles, top with spinach .
- Pour the remaining egg over.Cover pan and simmer for 2 mins.
- Remove lid and flip. Sprinkle generously with shredded cheese.
- Fold in half. Let the cheese melt and become gooey.
- Serve immediately with toast ,muffins, fresh fruit etc.
Tips:
If you love garlic, add ½ tsp chopped garlic and sauté along with mushroom and spinach.
