Baked Fish with Fresh Mint and Coriander

Pieces of fish  smothered with a green paste of fresh mint, cilantro, lemon and spices and baked till tender and juicy. It tastes so refreshing and light!

 Ingredients:
 
1 lb firm fish cut into 3 inch pieces
Oil to baste when baking
 
The Green Marinade:
 
1 ½ cup fresh cilantro / coriander leaves chopped
1 /2 cup fresh mint leaves chopped
1 - 2 green chilies
2 tbsp oil
1 tbsp sour cream
1 tsp ginger garlic paste
1 tsp salt (add more or less according to taste)
1 tsp lemon juice
1 /4 tsp garam masala
 
Preparation:
 
  • Wash and pat dry the fish with paper towels.
  • Season with salt on both sides and set aside.
  • Grind all the ingredients under “Marinade” in a food processor or blender. Check seasoning.
  • Pour the marinade over the fish pieces. Toss to coat evenly. Cover and refrigerate for at least 2 hrs for the flavors to penetrate.
  • Preheat oven to 400 F.
  • Grease a baking sheet with some oil. Arrange the fish pieces in a single layer. Baste the fish with oil and bake uncovered for about 10 - 15 mins turning once .
  • Broil on high for abt 2 mins till the edges brown.
  • Enjoy hot with rice, bread or salad!
 
Tips:
 
1. Use any firm fish - Tilapia, catfish, salmon, cod , haddock etc. work well.
2. Increase or decrease the quantity of green chilies and garam masala to add or reduce the heat in this dish.
3. The marinade can also be used as a dip for some Indian appetizers like samosas, pakoras etc.
