This delicious green fish preparation takes no time to put together.I usually marinate the fish in a Ziploc bag and let it sit in the freezer.Comes in handy that week for a fishy meal! Bake or Grill the fish.

Ingredients:
1 whole fish(about 1 lb)-gutted and cleaned-snapper,pomfret, Tilapia etc.
1 small bunch coriander
1 small bunch mint
5 tbsps lemon juice
4-6 green chilies
1/2 tsp garam masala
1/4 tsp jeera powder
1/4 inch piece ginger
2 tbsp oil
Salt to taste
Preparation:
- Wash the fish, pat dry ,make small slits on the sides,sprinkle some salt and set it aside in an oven proof dish.
- Grind the coriander,mint,chilies,lemon juice,cumin powder,garam masala,ginger,oil & salt.
- Rub the marinade all over the fish,inside slits & the inside cavity.
- Let it marinate for an hr atleast.Over night marination is perfect.
- Preheat oven to 400 deg F.
- Baste the fish with oil and put the fish in the preheated oven.
- Baste with the marinade a few times during baking.
- Bake for 30 mins,turning once halfway through the baking.
- At the end broil the fish for 1-2 mins, until slightly browned & crispy on the outside.
- Transfer carefully to serving plate.Serve garnished with chopped coriander & lemon wedges.
Tips:
- You can also use medium pieces of fish for this recipe.Note that the baking time will be much lesser.
- Use a grilling basket for grilling fish.It is much easier to turn without breaking the fish.
