Spicy Fish Kebab

A simple seafood kebab / kabab that can be prepared in advance & grilled just before serving.


Ingredients:

2 lbs fish steaks-firm white fish like sword fish ,king fish etc.
3 tbsp oil
Juice of 1/2 lemon
1 garlic clove crushed
1 tsp chili powder
3 tomatoes, quartered
2 onions,cut into wedges
Salt
freshly ground black pepper

Preparation:
  • Cut fish into large cubes.
  • Mix together-oil,lemon juice,garlic,chilli powder,seasoning.
  • Pour mixture over fish ,cover & let it marinate in the refrigerator for 2 hrs.
  • Thread the fish cubes ,tomato & onion onto a skewer- alternating
  • Baste with oil and grill the kebab for 5-10 mins .
  • Baste frequently with the remaining marinade while grilling- turning occasionally.
  • Serve with a salad,bread or rice.
Tips:

  1. If you want to avoid threading the fish & vegetables in the last min,you can thread them ahead of time & let it sit in the marinade in the refrigerator.Grill just before serving.
  2. If using wooden skewers soak them in water as per instructions.
