Cauliflower Paratha

Parathas stuffed with spiced cauliflower and cooked on a tawa with ghee.Simply Delicious!

Ingredients:

For the Dough:

2 cups whole wheat flour
warm water to knead the dough
Salt to taste
1 tbsp oil
Ghee to fry parathas

For the Filling:

1 medium cauliflower
10 - mint leaves chopped
1 small bunch fresh corriander leaves chopped
1/2 inch piece fresh ginger minced
1/2 tsp garam masala
1/4 tsp red chili powder
1/2 tsp amchur powder
2 green chilies chopped (optional)
salt to taste


Preparation:

  • Mix together the flour, salt, oil and water and knead the dough. Cover and set aside for 20 mins.Divide the dough into 8 balls.Dip the balls in flour, shake off excess flour and set aside.
  • Cut the cauliflower into very small pieces.Place in a microwavable bowl.Sprinkle some salt and add some water.Cover and cook till done.(About 6-8 mins)
  • To the cooked cauliflower add the mint and corriander leaves, ginger,garam masala, amchur powder, chilies and chili powder.
  • Mix ingredients and adjust seasoning according to taste.
  • Divide the cauliflower mixture into 8 balls.
  • Roll out each ball of dough into a small circle.Place a ball of cauliflower mixture in the middle.Close the dough around it and seal by pinching the dough together.
  • Sprinkle some flour and roll out the ball carefully until thin.
  • Heat a tawa .Spread some ghee and cook the paranthas on both sides.
  • Serve hot off the stove with yogurt, pickle or a nice dal.
