Egg Parotta or Kotthu Parotta

Also known as kotthu parotta. This is a popular road side dish in Tamil Nadu. You can make it at home in a jiffy with frozen parottas.

Ingredients:

6 Parotta
4 Egg
3 Green Chillies chopped
1 Medium Onion diced
1 Tomato chopped
1 Sprig Curry Leaves
A pinch of Turmeric Powder
1/4 Tsp Garam Masala Powder
2 Tsp Oil
Salt to taste

Preparation:
  • Break the parotta into small pieces.
  • Beat the egg & keep it aside.
  • In a wok,heat oil & add onions, little salt, curry leaves & green chillies.
  • Fry till onions are transparent.
  • Add chopped tomatoes, turmeric powder, garam masala powder & cook till tomatoes are soft.
  • Now add the parottas & mix till parottas gets a nice coating of the masala.
  • Add egg & salt.
  • Turn the heat up & fry till egg gets cooked & the dish is dry.
  • Serve hot.
Tips:

You can use frozen parottas.Use Kerala style round flaky ones.
After adding egg, keep the heat high & cook fast to get a nice dry dish or else it could get soggy.
Tear curry leaves with your fingers before adding them to intensify the flavour.
