Khara Masala Lamb/Mutton

Whole spices are used in this curry -so warn the diners!It is delicious when served with fresh naan or a rice accompaniment.

 

Ingredients:
Oil
2 onions chopped
1 tsp shredded ginger
1 tsp sliced garlic
6 whole dried red chilies
3 cardamom pods
2 cinnamon sticks
6 whole pepper corns
3 cloves
salt
1 pound boneless lamb/mutton
2 1/2 cups water
2 fresh green chilies,sliced
2 tbsp chopped fresh cilantro


Preparation:
  • Heat oil in a large saucepan
  • Fry onions till they are lightly browned.
  • Add 1/2 the ginger and 1/2 the garlic and stir well.
  • Add 1/2 the red chilies, cardamom,cinnamon,peppercorns,cloves and salt
  • Add lamb & cook 5mins stirring continuously so the maet is well coated with the spice mix.
  • Pour water, cover & cook for about 40 mins ,till the water evaporates & meat is tender.
  • Add rest of the shredded ginger,garlic,whole dried red chilies,sliced fresh green chilies & fresh cilantro.
  • Continue to stir till the oil separates.
  • Transfer to a serving dish and serve immediately.

Tips:
This dish is best made with good quality leg of lamb/mutton.
