Millaku Kari ( Pepper Mutton)

A classic South Indian side dish which can accompany virtually any main dish (except seafood) both veg and non-veg.

Ingredients:

500 gm Mutton or Chicken(cut into small pieces)
50 ml Oil
1 Medium onion chopped
1/2 tsp chilli powder
1/2 tsp coriander powder
1/4 tsp Turmeric powder
1/4 tsp Garam masala
2 Medium tomatoes chopped
salt to taste
2 tsp Lemon juice

For masala paste : (for grinding)

2 tsp ginger garlic paste
1 pod cardamom
2 cloves
1 pieces of cinnamon stick -abt 2 inches long
2 tsp Whole pepper
1 Medium onion


A few coriander leaves to finish.

Preparation:
  • Grind masala paste ingredients to a fine paste.
  • Heat oil in a pressure cooker and fry chopped onion till translucent
  • Add masala paste and fry for 2-3 mins till the raw flavour dissipates, and oil seperates.
  • Add washed mutton pieces, fry for 2 mins
  • Add dry masala powders and chopped tomatoes, stir/cook for 3 mins.
  • Add 1 cup of water and salt.
  • Pressure cook till the mutton is tender, take lid off and check water content.
  • Cook further till consistancy is desirable. If very dry (sukka) is desired add a little oil and fry the dish in the end.
  • Add chopped coriander on top .

Tips:

If pressure cooker is not available use a heavy bottomed pot and slow cook with occosional stirring till meat is cooked and desired consistancy attained.

How do I make the gravy thick
Hi, 
 
Could you please suggest how do I make my gravy thick, it is usually very watery. I usually pressure cook the meat, so could you please suggest the quantity of water to be added when I pressure cook.
