Carrot Rice

This colorful rice works well as a starter in a multi-course meal. It can also be a quick lunch, with chips.

Ingredients:

1 Cup Basmati rice
1 1/2 Cups Grated Carrot
1 Medium Onion sliced
2-3 Green chillies sliced
2 Garlic crushed
1" Ginger crushed
7 Cloves
1" Cinnamon
1 Sprig Curry leaves
2 Tbsp chopped Coriander leaves
2 Tsp Oil
Salt to taste


Preparation:

  • Heat oil in a cooker, add cloves, cinnamon, garlic and ginger.
  • Fry for few minutes and add green chillies and onion.
  • Fry till onions are soft.
  • To this add grated carrot. Fry for a minute.
  • Add rice, water and salt.
  • Pressure cook till rice is cooked.
  • Open the cooker, add coriander leaves and curry leaves.
  • Mix gently.
  • Serve hot with potato chips or vadams.
