Easy Chicken Biryani

This is a simple easy to make chicken biryani which i make every other week. I got this recipe from my Sister-in-law, Sudha.

Ingredients:


1 cup Basmathi Rice
1.5lbs Chicken things
1 Tomato chopped
2 tbsp Butter
1/2 tsp Turmeric powder
1/2 cup Coconut milk
1 1/2 cup Water

To Grind Coarsely:

1/2 Red Onion diced
3 green Chillies
1/2 cup Mint Leaves
1/2 cup Coriander Leaves
1" Ginger
5 cloves Garlic

Spices:

4 Cardamoms
8 Cloves
1" Cinnamon stick
2 Marati Moggu
1 Star Anise
few Kalpasi

Preparation:
  • Cut the chicken into small pieces and leave aside.
  • Melt butter in a cooker and  add all the spices.
  • Fry for 10 seconds.
  • To this add the ground mixture and fry till you get a nice aroma.
  • Now add chopped tomato, little salt and turmeric powder.
  • Cook in low flame till tomatoes are soft.
  • Add the chicken and little salt and cook till masala gets coated with the chicken and ghee floats on top.
  • Add rice, coconut milk, water and salt.
  • Cook in medium flame and once the rice is 3/4 th cooked, put the lid on and pressure cook for about 5 minutes in low flame.
  • Serve hot with onion raita and boiled egg.
Tips:

Marinate chicken with ginger-garlic paste & a tsp of curd overnight.
