Ghee Rice

Rice cooked with dollops of ghee and whole spices.Can be eaten with almost anything.

Ingredients:

2 cups Basmati rice

4 cups water

1/2 cup coconut milk or 2 tbsps coconut powder

2 onions sliced thin

1/2 tsp ginger garlic paste

3 cardamoms

2 cloves

3 pieces of cinnamon

2 bay leaves(optional)

2 tbsps chopped mint leaves

2 tbsps chopped coriander leaves

3 tbsps ghee/Indian butter

Preparation:

  • Heat the ghee.
  • Add the whole spices,onions and salt and sauté for a few minutes.
  • Add ginger garlic paste and fry till golden brown.
  • Add the chopped mint and coriander leaves.
  • Now add the water ,coconut milk and adjust the seasoning(salt).Bring to a boil.
  • Add the rice,cover and let it simmer till the rice is fully cooked.

Tips:

Garnish with fried onions if desired.
