Lemon Rice

A classic simple South Indian rice dish.

Ingredients:

1 cup raw rice
1/4 tsp mustard
1/2 tsp urad dhal
1 tsp chana dhal(kadala paruppu)
a pinch of methi seeds
2 red chilles broken
1/4 tsp turmeric powder
2 tbsp roasted peanuts
4 whole cashews broken into pieces
3 tbsp lemon juice
1 sprig curry leaves
1 tbsp oil
Salt to taste


Preparation:
  • Cook rice with salt & allow it to cool completely.
  • The grains should be separate.To this add lemon juice & & Keep aside.
  • Heat oil in a pan & add mustard.
  • When they crackle add urad dhal,chana dhal & methi seeds.
  • Fry till dhal changes color to light golden.
  • Now add broken red chillies,peanuts,cashew & curry leaves.
  • Fry for few seconds & add turmeric powder & pour this over the
  • rice & mix gently.
  • Serve with potato chips.


Tips:

Red chillies can be replaced with green chillies.Can be made with left over rice.
