Mushroom Biryani

A modern twist to the classic biryani. Good alternative if you want to make briyani without meat.

Ingredients:

1 cup Basmathi rice
10 oz Button Mushrooms
1/2 cup fresh White beans
1 medium Onion finely sliced
1 medium Tomato chopped
1 Tsp Ginger-garlic paste
2-3 Green Chillies sliced
2 Cardamoms
4 Cloves
1/2" Cinnamon
1 Star anise
2 Marati moggu
few Kalpasi
1/2 cup chopped Mint and Coriander Leaves
1/2 cup Coconut milk
1 1/2 cups Water
1 Tbsp Butter
Salt to taste

Preparation:
  • In a cooker, melt butter and add cardamoms, cinnamon, cloves, star anise and  marati moggu.
  • Fry for few minutes.
  • Add green chillies, onion, little salt and  ginger-garlic paste.Saute till onions are transparent.
  • Add tomatoes and cook till soft.
  • Add chopped mint and coriander leaves. Fry for few minutes.
  • To this add white beans and quartered mushrooms.
  • Add rice, coconut milk, water and salt. Mix well.
  • Bring it to a boil. Reduce heat.
  • When its 3/4th cooked, put the lid on and  pressure cook for about 5 minutes in low flame.
  • Serve hot with raita.
