Nombu Kanji / Rice Congee

A tasty rice porridge that is made during Ramadan / Ramzan (the month when muslims fast).Kanji can be plain with just the rice & spinach or with minced chicken,lamb etc.

Ingredients:

1 /2 lb or 220 gms rice

4 cloves of garlic

1 /2 onion chopped (use other half for seasoning)

2 cardamoms

2 pieces cinnamon

1 pinch methi seeds/fenugreek

1 1/2 cups frozen spinach or drumstick leaves

3 cups water

2 cups coconut milk

salt to taste

Seasoning:

1 tbsp ghee

1 /2 onion chopped

4 curry leaves

1 tsp ginger garlic paste

Preparation:

  • Pressure cook rice with all the other ingredients except for the coconut milk.
  • When cooked ,mash well.
  • Add the coconut milk and bring to a boil.Add more water if it is too thick.
  • Remove from heat.

Seasoning:

  • Heat ghee.
  • Fry the onion,ginger garlic paste and curry leaves until lightly browned.
  • Pour over the kanjee and mix well.
  • Serve as it is or with pudina –coriander chutney.

Tips:

You can also put in other vegetables like carrot,peas etc.
