Saffron Rice

A simple, beautiful dish - Basmati rice cooked with whole aromatic spices and saffron which gives off a beautiful rich golden yellow hue .

Ingredients:

 
2 tbsps butter or ghee
1 medium onion chopped
3 whole cloves
3 cardamoms
2 - 2 inch piece cinnamon stick
1 cup basmati rice
2 cups water
Salt
1 pinch turmeric
1 pinch saffron
 
 
Preparation:

 
  • Soak the saffron in 2 tbsps of hot water and let it sit 10 mins.
  • Heat the butter and fry the onions till soft.
  • Add in the whole spices, enough salt, saffron and water and bring to a boil.
  • Add in the rice.Reduce heat and simmer till rice is soft and cooked.
  • Fluff with fork and serve hot.
 
Tips:

If desired, substitute chicken stock instead of water when cooking the rice.Since chicken stock is normally well seasoned you will not need to add much salt.
