Tomato Rice

Ripe tomatoes cooked with spices and mixed with rice. A “no mess” dish perfect for potlucks, picnics and lunch boxes!

Ingredients:

2 cups cooked Basmati rice

4 large red ripe tomatoes chopped

2 onions chopped sliced

2 tbsps oil

5 curry leaves

1/2 tsp mustard seeds

1 /4 tsp jeera/cumin seeds

2 dried red chilies

1 tsp fresh ginger minced

1 /2 tsp garam masala

1 tsp coriander powder

1 heaped tsp cumin powder

1 /4 tsp chili powder

1 /4 tsp turmeric powder

Salt to taste

Preparation:

  • Heat oil.
  • Add the mustard seeds, jeera, red chilies and curry leaves.
  • Once it crackles add the sliced onions and ginger with a little salt.Cook till onions are soft.
  • Add the chopped tomatoes, jeera powder, coriander powder, chili powder, garam masala , salt & turmeric.
  • Mix well, cover and let it cook till the oil separates.
  • Turn off heat.
  • Add in the cooked rice and mix well till rice is evenly coated.
  • Enjoy with potato chips, appalam or any other easy side!


Tips:


This dish is a good way to use up left over rice.
