Vegetable Biryani

A delicious mixed rice cooked with carrots,peas,potatoes,green beans and whole spices - garnished with fried bread pieces.

Ingredients:

2 cups Basmati rice

1 tsp Ginger garlic paste

1 Onion sliced

1 cup carrot and green peas

3 /4 cup green beans cut 1 inch in length

1 large or 2 medium potatoes cut into cubes

4 cardamoms

2 pieces cinnamon

3 cloves

1/4 tsp turmeric powder

1 /2 cup coconut milk or 4 tsps coconut powder dissolved in water

1 /4 cup oil

Salt to taste

3 ½ - 4 cups water (add more or less according to the brand of rice)

For Fried bread:

4 slices of bread

oil to deep fry.

Preparation:

  • Heat oil.
  • Add the chopped onions and some salt and fry a few mins.
  • Add in the whole spices and the ginger garlic paste and fry till golden brown.
  • Add the vegetables,more salt and the turmeric powder –mix well and cook a few mins.
  • Add the basmati rice,coconut milk and water and bring to a boil.
  • Reduce heat,cover and simmer till the rice and vegetables are well cooked.
  • Garnish with fried bread pieces.
  • Serve hot with raitha,boiled eggs,brijals,chicken or any other side!!

Fried bread:

  • Cut bread slices into 1 inch pieces.A big slice should yield 9 pieces.
  • Heat oil and deep fry till brown and crispy.
  • Drain on paper towels.

Tips:

1.I usually make this biryani in an electric rice cooker and use the frozen green peas and carrot mix and frozen french cut green beans.Saves a lot of time.And the Biryani is ready in no time!

2.Note that bread will absorb a lot of oil when fried.So make sure you heat enough oil to fry the entire batch.You can fry the bread ahead of time and store it in an air tight container.
