Tomato Jam

This bright red jam is the happy ending to a tasty biryani meal.

Ingredients:

1 lb - red, ripe tomatoes (I usually use plum tomatoes)

1 1/4 cup sugar

a pinch of red chili powder (optional)

3-4 cardamoms

a pinch of salt

1 tbsp ghee

10 cashew nuts to garnish

15 raisins to garnish

Preparation:

  • Grind the tomatoes in a blender/processor well-make sure the skin & seeds get pureed.If not, strain the puree.
  • Heat the tomato puree in a non stick sauce pan.
  • Add in the cardamoms,chili powder and salt and let it boil, stirring occasionally.
  • Continue cooking till all the liquid evaporates and the puree is bubbling,almost sticking to the pan .
  • Now add in the sugar ,stir well & remove from the flame immediately.
  • In another pan ,heat some ghee.
  • Fry the cashew nuts & raisins and pour over the jam.


Tips:

When boiling the tomato puree use a big pan, since the tomatoes tend to boil over when cooking.
