Carrot Halwa

Truly delicious - If you like carrot halwa with the rich ,creamy taste of milk and not just sweetened carrots, this is the recipe for you. Carrots simmered with ricotta cheese and condensed milk and garnished with fried cashews & raisins.

Ingredients:

8 carrots

1 pinch salt

1 /2 tsp ghee

1 lb box ricotta cheese

14 oz can sweetened condensed milk

5 cardamoms/elaichi

1 /2 cup sugar

Garnish:


1 tbsp ghee

2 tbsps cashews

1 tbsp raisins

Preparartion:

  • Grate carrots & pressure cook them with ghee, a pinch of salt and enough water.
  • In a large NONSTICK pan heat up 1 box ricotta cheese. When it is gooey, add in the sweetened condensed milk , sugar and elaichis.
  • Cook till most of the water has evaporated –stirring occasionally.
  • Add in the cooked carrots and stir well. Cook till the water is gone.
  • Turn off the heat and allow to cool. ( The halwa may seem soggy, but will be fine once it cools.)
  • Transfer to a serving bowl. Garnish and enjoy!

Garnish:

  • Heat ghee.
  • Fry the cashews and raisins till golden brown. Pour over halwa.

Tips:

1. Use NONSTICK for this recipe!!! Makes cooking and clean up so EASY.

2. Using Ricotta cheese is an easy way to get the creamy, milky taste. When boiling the cheese and condensed milk, be careful since it splatters. Use a splatter guard lid ( the one with a mesh) Just cover and stir around only when needed.

3. I love to serve warm carrot halwa with a scoop of vanilla ice cream. A great combination.

I love carrot halwa and I am grateful to you for a lowfat version! The recipe I have is so full of fat that I don't make it much. Love the cheese part too, never heard of it that way and I look forward to trying it soon. I will let you know how it goes. One question, Haneeda, how long should I pressure cook the carrots? Since they are grated, they'll be done super fast. Can I boil them and get the same results? Thanks.

Carrot halwa
Did I mention that I dont use lowfat ricotta cheese for carrot halwa!! :grin  
I think the lowfat version will work well though -pl. let me know if u try it.You can def. boil the carrots,I've tried it.I pressure cook carrots for 4 whistles just to make the whole process quick....remember that the carrots will simmer a bit again along with the ricotta and condensed milk.
