Coconut-Carrot Burfi

This sweet is famous among children because of it's orange colour got by adding carrot.

Ingredients:

Grated Coconut - 1 cup
Grated Carrot - 1 cup
Sugar - 1 1/2 cups

Preparation:


1. Apply little of ghee all over a plate and keep it aside.
2. In a pan add grated carrot and fry a bit till it is half cooked.
3. Then add coconut and mix well.
4. Finally add sugar and stir it continuously little the sugar melts and the paste starts to leave the sides of the pan.
5. Immediately pour the mixture over the plate and spread it.
6. Cut the burfi in diamond shapes and decorate with cashews or raisins.

Tips:


Similarly, this recipe can be tried with beetroot also which will give pink colour to the burfi. Here the grated beetroot has to cooked completely before adding coconut.
