I was trying to  think of a fun snack to do for my kindergartener’s “Story Snack Day”. I decided to read the book “Froggy Eats Out” and this is what I came up with for a snack - cute , super easy and fun Froggy cupcakes, that were enjoyed by the children and teachers alike! I served them with a “Krabby Patty”  on the side - for a burger!

Ingredients:

1 - 1 lb box - Cake mix (any variety- I used yellow cake mix)
24 - Disposable baking cups
1 - 1 lb box pre-made vanilla frosting (I used Betty Crocker)
Green food color (I used Wilton’s leaf green color)
1 tube black gel icing
Marshmallows

Preparation:

  • Bake cup cakes in disposable baking cups as per directions on box and let it cool.
  • Add green food color to the box of vanilla frosting and mix well till the desired color is obtained.
  • Frost the cupcakes with the green frosting.
  • Cut marshmallows in half. Cut each half of the marshmallow  in half . (to get 4 semi circles out of 1 marshmallow).
  • Press the flat side of the marshmallow  into the green frosting to make 2 eyes on each cupcake.
  • Using the black gel icing -Pipe  black eyeballs on each marshmallow.
  • Draw a smiley mouth on each cupcake. Voila!!! Cute froggy cupcakes are ready !

Tips:

Use red or pink gel icing for the mouth OR use raisins or m& ms for eyeballs etc. With a little  imagination - the possibilities are endless!

Ease of preparation:  Easy

No. of servings:  24 frogs
