Rava Kanji / Kheer

A simple porridge that is quick and easy to make. This dish is especially good for little children and for those days when we want something light in our tummies (without the garnish ofcourse)!

Ingredients:

3 cups milk

3/4 cup rava / sooji

1/2 cup sugar(adjust according to taste)

4 cardamoms

1 tsp. Ghee(optional)

Garnish:

1 tbsp ghee

2 tbsps cashew nuts

2 tbsps raisins

Preparation:

  • Heat ghee in a pan. Add sooji and roast till light brown. Set aside to cool.
  • Boil milk in another pan .
  • Add cardamoms and sooji slowly. Stir to avoid any lumps.
  • Let it simmer till the sooji is well cooked.
  • Add sugar and mix well.
  • Serve hot or cold. Tastes good either way.
  • Garnish:
  • Heat ghee and fry the cashew nuts and raisins. Pour over kheer and serve.

Tips:

1. For a healthier kheer- avoid the ghee. Dry roast the rava and omit the garnish.

2. Use a whisk to mix –works better to avoid lumps.
