I first tasted this delicious burfi at my friend Mehfuza’s place. Ever since, this dessert is one that is always enjoyed by my family - tasty and moist with just the right amount of sweetness. Mehfuza, thank you so much for sharing this wonderful recipe with me.

Ingredients:
 
Syrup:
 
2 / 3 cup sugar
2/ 3 cup water
1 tbsp lemon juice
 
Burfi / Cake:
 
1 / 2 cup butter
3 / 4 cup sugar
1 / 2 cup all purpose flour
1 cup sooji/ semolina / rawa
1 /2 cup desiccated coconut
3 / 4 cup milk
1 / 2 tsp baking powder
1 tsp vanilla extract
 
Garnish:
 
2 tbsps slivered almonds
 
Procedure:
 
  • Make a syrup from the sugar, water and lemon juice. Simmer for about 6-8 mins. Allow it to cool in the fridge while you make the cake.
  • Preheat the oven to 350 F.
  • Line a 9 x 9 inch pan with foil and grease it with some melted butter.
  • Melt the butter in a pan and add the sugar, all purpose flour, semolina / sooji, desiccated coconut, milk, baking powder and vanilla extract .
  • Mix thoroughly and pour into the greased pan.
  • Bake for 30-35 mins, until top is golden.
  • Remove from oven and while hot, cut into squares or diamond shape.
  • Pour the cold syrup over the HOT cake.(You may not require the whole quantity of syrup.)
  • Garnish with almonds.
  • Serve hot or cold.
 
Tips:
 
Make this sweet the day before to let the syrup soak in.
