Grilled Potato Slices

My husband likes to grill in summer. These super easy grilled potato slices are his latest favorite - a great addition to any grilled meal.

Ingredients:
 
2 potatoes
1 /4 cup olive oil
salt
freshly ground black pepper
 
Preparation:
 
  • Wash and slice the UNPEELED potatoes – about quarter inch thick.
  • In a shallow dish, mix together the potato slices  and  oil and season with sufficient salt and pepper.
  • Preheat the grill so it is medium hot.
  • Spread the potato slices around and grill covered for about 7 mins on each side – till tender and lightly browned. 
  • Serve hot immediately.
 
Tips:
 

If you like the potatoes crisp and browned  - leave the slices on the grill for a few extra mins until crisp.
