This is a popular vegetable from Karnataka in a simple preparation.

Ingredients:

1 Lb Kovakkai/Tindora
1 Tsp Chilli Powder
1/2 Tsp Turmeric Powder
1 1/2 Tsp Oil
Salt to taste

Preparation:
  • Cut kovakkai into thin slices.
  • Heat oil in a skillet.
  • Add kovakkai, turmeric powder, chilli powder & salt.
  • Cover and cook in low flame for 2 minutes.
  • Uncover and fry till golden brown.
