A vibrant mix of vegetables cooked in a coconut ,green chili gravy and topped with fresh,hot coconut oil.The aroma is amazing! A famous dish in a typical Kerala cuisine.

Ingredients:

1 /2 cup Brinjal

1 /2 cup plaintain

1 /2 cup carrots

1 /2 cup peas

1 /2 cup white pumpkin

3 /4 cup drumsticks

1 /2 cup peerkangai or ridge gourd

4 – 6 green chilies (according to taste)

6 curry leaves

salt to taste

1 tbsp coconut oil

2 tbsps plain yogurt

To Grind:

1 /2 cup grated coconut

1 pinch turmeric powder

1 tsp cumin/jeera

Preparation:

  • Cut all the vegetables .(Traditionally the vegetables are cut into long pieces for this dish.)
  • Grind together the coconut,cumin and green chilies.Add yogurt to this and set aside.
  • Cook all the vegetables with salt, turmeric, and sufficient water until soft.
  • Add in the ground ingredients and bring to a boil. Remove from heat.
  • In a small pan,heat fresh coconut oil .Add the curry leaves and fry till it crackles.Pour this over the vegetables.
  • Serve hot with plain rice.

Tips:

Use any other vegetables you prefer - like potatoes,yams,ash gourds etc.
