Brinjal/Eggplant Gotsu

The best accompaniment for Idli, dosa or pongal.
brinjal gojju
Ingredients:

5 small Brinjals cubed
1/2 Red Onion
1 Tomato
3 Green Chillies
1 1/2 Tsp Sambar Powder
1/4 Tsp Tamarind Paste
Little Hing
Little Turmeric Powder
Salt to taste
1/4 Cup chopped Coriander leaves

Seasoning:

2 Tsp Oil
1/4 Tsp Mustard Seeds
1 Tsp Channa Dal
1/2 Tsp Urad Dal
Few Curry Leaves

Preparation:
  • Pressure cook brinjal with salt, water, turmeric powder, hing, chopped onion, chopped tomato and green chillies for 2 whistles. Mash the mixture with a wooden masher.
  • Heat oil in a pan and add mustard.
  • Once mustard starts popping, add rest of the seasoning ingredients.
  • Fry for few minutes and add cooked brinjal mix, tamarind paste and sambar powder.
  • Cook in medium flame till the gravy thickens.
  • Add chopped coriander leaves and mix.
  • Serve hot with idli or dosa.
