Brinjals in Creamy Gravy

Fried brinjals simmered in a creamy onion-milk gravy seasoned with spices.A perfect side for chapathis,rice and even biryani.This is one dish that tastes even better the next day!

Ingredients:

1 lb brinjals

3 medium onions

½ tsp chili powder

½ tsp turmeric

½ cup milk

salt to taste

oil- to deep fry & cook.

2 pinches mustard seeds.

4 curry leaves.

Preparation:

  • Heat some oil & cook onions till translucent with salt.Grind the onions in a blender/food processor.
  • Wash brinjals & pat dry.Cut them into 4.
  • Deep fry brinjals till lightly browned and set aside.
  • Heat some oil.Add the mustard seeds and curry leaves and fry.
  • Pour in the onion paste.Add the chilli powder and turmeric and cook a few mins.
  • Pour in the milk and let it boil.Cook till the gravy becomes thick.
  • At the end, add the fried brinjals and simmer for 5 mins.
  • Serve hot with rice or chapathis

Tips:

Simple onion paste: Boil onions with enough water in the microwave for 10 mins.When cooked, remove onions with a slotted spoon to drain all the water and transfer into blender.Puree.
