Drumstick and Potato gravy

Tender potato cubes and drumsticks in a coconut gravy. Enjoy with hot white rice.

Ingredients:

1 tbsp oil
1 pinch mustard seeds
1 pinch jeera/ cumin seeds
4 curry leaves
1 large potato cut in cubes
drumsticks (cut in 3 inch long pieces- about 10 pieces)
1 medium onion - sliced
1 tomato - chopped
1 tsp coriander powder
¾ tsp garam masala
1 pinch turmeric powder
½ tsp chili powder (optional)
1 cup water
1 cup coconut milk
Salt to taste
Preparation:

  • Heat oil.
  • Add the mustards seeds, cumin seeds and curry leaves.
  • When it splatters add the sliced onions .Sprinkle some salt .Cover and cook a few mins till the onions are soft.
  • Add the tomatoes, coriander powder, garam masala , turmeric powder, chili powder and water.Mix well.
  • When the masala is bubbly add the potatoes and drumsticks. Season with salt.Cover and let it cook till the vegetable are soft. (About 15 mins)
  • Add the coconut milk - simmer 1 min.
  • Serve hot with rice.
 
Tips:

I used “Deep” brand cut , frozen drumsticks for this recipe.They are very tender and easy to use.
