Kara Kolumbu

Kolumbu with drumsticks and brinjal that goes well with rice.

Ingredients:

1 Drumstick cut into medium size pieces
3 Small Brinjals cut into pieces
6 Cloves of Garlic cut into pieces
1 Tomato chopped
1/2 medium Onion diced
1 Tsp Tamarind Paste
1 Tbsp Oil
Salt to taste

Seasoning:
1/4 Tsp Mustard
1/4 Tsp Methi/Fenugreek Seeds
Few Curry leaves
Grind to Paste:
1/3 Cup grated Coconut
2 Tsp Sambar Powder

Preparation:
  • Heat oil in a pan and add the seasonings.
  • When mustard crackle, add garlic and onion. Saute till onions are soft.
  • Add tomatoes along with little salt and cook.
  • Add drumsticks and brinjal.Cover and cook in low flame for 5 minutes.
  • Add a cup of water and tamarind paste. Cook for 10 minutes in low flame.
  • Add the coconut sambar powder paste along with a cup of water. Add salt.
  • Cook till oil floats on top of the gravy.
  • Serve hot with rice.
