Kathirikkai / Brinjal Puli Kolumbu

Brinjals cooked in coconut and tamarind gravy. Goes very well with rice and appalam.

Ingredients:

4 small Violet Brinjal cubed
1 small red Onion diced
1 Tomato chopped
8 cloves Garlic
2 Tsp Sambar Powder
1/3 Cup Coconut Paste
1/4 Tsp Tamarind Paste
2 Tbsp oil
Salt to taste

Preparation:

  • Heat oil in a pan, add garlic and saute for few minutes.
  • Add onion and saute till its transparent.
  • Add tomato and little salt. Cook till its soft.
  • Add brinjal and saute for few minutes.
  • To this add sambar powder, salt, tamarind paste and half cup water.
  • Cook for about 10-15 minutes.
  • Now add coconut paste along with a cup of water.
  • Cook till oil separates.
  • Serve with rice.

Tips:
  • Cooked brown / black channa can be added along with brinjal.
  • Can be seasoned with mustard, methi seeds, broken red chillies and curry leaves.
