Okra cooked in a tangy tamarind and coconut gravy.A popular south Indian gravy that is a great accompaniment for plain rice.

Ingredients:
2 cups okra/lady's finger/vendakkai - cut
1 large onion chopped
1 large tomato chopped
1 ½ tsps coriander powder
1 /2 – 1 tsp chili powder
1 /4 tsp turmeric powder
1 pinch mustard seeds
1 pinch fenugreek/vendhayam/methi seeds
4 curry leaves
1 tsp tamarind concentrate dissolved in water (add more or less according to taste)
1 cup coconut milk
water
Oil
Salt for taste
Preparation:
- Heat oil .
- Add the mustard ,fenugreek and curry leaves and fry till it crackles.
- Add in the onions with a bit of salt and cook till translucent.
- Add the chopped tomatoes and cook a few mins.
- Now add the coriander,chili and turmeric powder .
- Toss in the okra ,add a little water ,mix well and cook till the okra is soft.
- Pour in the tamarind water.
- Add coconut milk and simmer for 5 mins.
- Serve with white rice or chapathis.
