Yummy rich mushroom stew. Goes with chapathi. Thank you Jessey for sharing this recipe with me.

Ingredients:

12 Mushrooms cut into quarters
1 medium Onion chopped
4 Green Chillies sliced
6 whole Cashews
1 1/2 Tsp Coriander Powder
Little Turmeric Powder
1/2 Cup Fresh coconut milk
Salt to taste
1 Tbsp Oil
Few Curry Leaves

Preparation:
  • Soak cashews in 1/4 cup water and grind to a paste.
  • Heat oil in a kadai. Add chopped onion and sliced green chillies. Fry till onions are soft
  • Add turmeric powder and coriander powder. Saute for few seconds.
  • Add cashew paste. Cook for few minutes.
  • Add mushrooms and mix till masala gets coated.
  • Add salt and coconut milk.
  • Cook for about 10 minutes.
  • Garnish with curry leaves.

Tips:

Button mushrooms or baby Bella mushrooms can be used.

Soaked cashews can be added without grinding.

Canned coconut milk can be added. But it tastes so good if you use freshly squeezed coconut milk.
