Palak Paneer

Paneer cooked in a thick creamy gravy ,the base being-spinach,tomatoes ,onions and spices.I've tried various recipes for palak paneer,but this one is definitely the most simple and delicious.

Ingredients:

250gms Paneer

300 gms spinach(fresh or frozen)

1 onion chopped

4 oz tomato puree or 2 large tomatoes pureed

1 tsp ginger garlic paste

1 pinch hing

1/2 tsp jeera

1/4 tsp turmeric powder

1/2 tsp chili powder

1/2 cup heavy cream

oil

salt to taste


Preparation:

  • Cook the spinach in the microwave for 5 mins.Puree the cooked spinach in a blender/processor about 90% and set aside.
  • Cut paneer into cubes.Heat oil and fry paneer lightly.(If you do not want to fry the paneer, it is ok).
  • Remove fried paneer and set aside.
  • In the same oil ,add jeera,hing,the onions and fry till translucent.
  • Add the ginger garlic paste and fry a few mins.
  • Add the turmeric and chili powder and mix well.Let it cook a min.
  • Add in the tomato puree,cover and let it simmer for about 5mins.
  • Add the pureed spinach and 1/2 the heavy cream.Mix well and let it cook for about 3 mins.
  • Add in the paneer pieces, mix and turn off the heat.
  • Transfer to a serving dish, top with the remaining cream(to garnish) and serve with naan or rice.


Tips:

Pureeing the spinach gives the gravy a creamy rich texture.But if u have very young, tender spinach, you may chose not to puree it.
