Potato Stew

This traditional Kerala dish - ishtew as it is often called - is served with appam. I learnt this recipe from my mom.

Ingredients:

1 large Potato cut into cubes
1 small Onion diced
1/4 Tsp Fennel Powder/Sombu Powder
1/2 Tsp Chilli Powder
1 Tsp Coriander Powder
1 Cup Coconut Milk
1/4 Cup Water
Few Curry Leaves
2 Tsp Oil
Salt to taste

Preparation:
  • Heat oil in a sauce pan and add diced onion, potatoes and curry leaves.
  • Cook in medium flame for about 2 minutes.
  • Reduce heat and add fennel powder, chilli powder, coriander powder and salt.
  • Fry for few seconds and add 1/4 cup coconut milk diluted with 1/4 cup water.
  • Cover and  cook till potatoes are soft.
  • Finally add thick coconut milk.
  • When it begins to boil, remove from fire.

Thanks Meenakshi. For appam, i normally make this stew & everyone likes it at home.
