I normally like to fry cauliflower (look at -Crispy Fried Cauliflower) since my kids love it and getting in their dose of vegetable is a breeze. But here is a simple curry recipe that does not require you to hover around your stove & goes well with chapathis or rice.

Ingredients:
1 medium sized cauliflower
1 large onion -chopped
1 medium tomato- chopped
Garlic- 2 cloves- minced
Ginger- 1 small piece- minced
Red chili powder- 1//2 tsp
Turmeric powder- 1/4 tsp
Garam masala-1/2 tsp
Coriander powder-1/2tsp
3 tbsps chopped coriander leaves
1/2 cup water
Salt
Oil
Mustard seeds- 1/2 tsp
jeera- 1/2 tsp
3 curry leaves-optional
1/4 cup coconut milk or 2 tbsp coconut milk powder dissolved in water
Preparation:
- Wash and cut cauliflower into medium size florets.
- Heat oil.Add in the mustartd seeds,jeera & curry leaves, once they begin to crackle,add the minced garlic and ginger,fry till lightly browned.
- Add in the chopped onions, a bit of salt and fry till translucent.
- Add the tomatoes and cauliflower.Sprinkle the chili powder,turmeric,garam masala,coriander powder & salt.Add water,mix well, cover & let it simmer .
- When almost done, add the coconut milk and cover till done..
- Garnish with chopped coriander leaves & serve.
Tips:
If you are not a fan of coconut milk, you can add 2 tbsps of creamy yogurt that is not sour.
