With fries readily available in almost all the fast food restaurants and frozen food sections in the grocery store you may wonder why even bother to make them at home.....Well there is something special in totally home made .These home made fries are crisp and delicious. A big hit with kids & those young at heart!!

Ingredients:
4 large potatoes-russets work fine
oil for deep frying
salt to season
Preparation:
- Cut potatoes into long,rectangular thin pieces.
- Soak them in ice cold water immediately for atleast 30 mins -1 hr.
- (This will help get rid of the starch which is essential for CRISPY fries)
- Drain cold water, wash the potatoes a few times with fresh water & lay them on a paper towels.You may need to change the towels a few times to get rid of most of the water.
- Heat oil till abt 325 F.
- Fry the potatoes in small batches, till they look slightly cooked & soggy.
- Set aside to drain excess oil & cool to room temperature.
- Heat oil again to 375 F ,and deep fry the potatoes till crisp & golden brown.
- Transfer fries onto paper towels and let the excess oil drain.
- Place fries on a large bowl, sprinkle with salt & toss till well mixed.
- Serve with kethup.
Tips:
It is important to fry the potatoes in SMALL BATCHES.When you put too many the temperature of the oil will drop and you will not get the desired crispy fries.
Note: that potatoes can take a lot of salt when seasoning.
