Try this delicious and 'uncomplicated’ cutlet recipe - An instant hit with kids.These warm,crisp mixed vegetable cutlets are sure to disappear the minute they are served. A fun and easy way to help your child eat their vegetables - try making them in different shapes - with the help of your child, of course!!!!!

Ingredients:

2 large potatoes cut up.

1 large onion chopped

1 cup fresh or frozen green peas

1 cup fresh or frozen carrots

1 /2 bunch coriander leaves chopped

salt

fresh ground pepper

1 egg beaten (OR) 2 tsp maida mixed with water(for those who want to avoid egg)

2 cups bread crumbs on a flat plate

Oil to deep fry.

Preparation:

  • Heat a tbsp of oil.
  • Add the chopped onions,coriander,potatoes,carrots and peas.
  • Season liberally with enough salt and pepper.Mix well.
  • Cover and let it cook for about 25 mins till the vegetables are well cooked.
  • Remove from heat.Make sure that all the water has evaporated.(the mix should be dry)
  • Mash all the vegetables till the mixture is firm.
  • Take mixture and make small balls and flatten them in your palms to make a circle.
  • Dip the circles in the egg or maida mixture.
  • Then coat it evenly with the bread crumbs.
  • Heat oil and deep fry until crisp and evenly browned.
  • Yummy cutlets are ready to be enjoyed!


Tips:

1.To make the cutlets more FUN, use different cookie cutters to make fun shaped cutlets.Dip cookies cutters in some oil before filling in the mixture.

2.You can boil potatoes separately and then add them to the mix .The results are the same.

3.If you want to avoid deep frying –bake cutlets at 400 F for 30 mins turning once halfway through cooking.

4.Rub some oil or wet palms while making the shape to avoid the mixture form sticking to your hands.

5.The perfect pattie for a veg. burger.

Aruna,Im glad you enjoyed this recipe.It is def. worth the little effort when you see your kids,family & guests enjoying them!A great make ahead dish that you can fry just before serving.
