Chicken Satay

Marinated chicken that is skewered and char grilled – The meat is succulent and full of flavor. Satay is a famous Thai dish .

Ingredients:

1 lb boneless chicken breasts

1 tsp black pepper

1 tsp coriander powder

1 tsp cumin / jeera powder

1 pinch turmeric (for color)

1 red chili (optional for more heat)

1 / 2 tsp fresh garlic

½ tsp fresh ginger

1 tbsp brown sugar

1 tbsp vegetable oil

1 tbsp soy sauce

salt at taste

1 tsp fish sauce

For Peanut Sauce:

1 /2 cup crunchy peanut butter

3 /4 cup coconut milk

1 /2 cup water

1-2 tbsps sweet chili sauce

1 - 2 tsps lemon juice

1 /2 tbsp soy sauce


Preparation:

  • Soak wooden skewers in cold water as per instructions.
  • Cut chicken into flat thin strips about 1 inch wide and 2 ½ inches long.
  • Process the pepper,ginger,garlic,chili,coriander,cumin,turmeric,soy sauce,sugar,fish sauce and oil.Check and adjust seasoning.
  • Marinate the chicken in this mixture for about 1 - 2 hrs in the refrigerator.
  • Thread the chicken pieces onto the skewers.
  • Heat a char grill .
  • Brush the chicken with oil and cook it for 2-3 mins on each side sprinkling with a little oil and brown sugar (this produces a nice color and flavor)
  • Serve hot with peanut sauce.

Peanut sauce:

  • Heat all the ingredients under Peanut Sauce in a heavy pan.
  • Stir mixture and bring to a boil.
  • Remove from heat and let it cool.The sauce will thicken once cooled.



Tips:

1. It is easier to thinly slice the chicken when it is partially frozen.

2. Make satay with any other meat you prefer like beef or lamb
